By default, the Gantt chart shows bars in a blue color. You can click "Set color" and select how you would like to color them according to their labels, members, statuses, etc.

Another option is to set colors for each card or list individually. To do this, click a card, then at the panel, click "Show empty attributes" and set a color to that card or list.

By status

In this case, you can see by each color that the card is open, paused, completed, etc. The legend below shows the colors for each of these statuses:
